Hey all.
Im thrilled ot find this community, looking at the recipies, I can't wait to get started on trying some! For my newbie kickoff, I figured I'd share my fav crock pot recipe.

Tuscan Chicken Sauce

1 to 1/2 lbs. of boneless chicken
3/4 cup tomato sauce
3/4 cup of cream
29 oz can Italian stewed tomatos- undrained
10 chopped mushrooms
1 red pepper chopped
1 green peper chopped
1 red monion chopped
1/2 cup chopped celery
Garlic powder to taste
Italian seasonings to taste
1 cup water
1/2 jar of sundried tomatos (fresh even better!)

Combine all ingrediants *except the cream* in a crockpot, and I usually simmer this on high for an hour, then on low for 5 hours, or so. Turn off crockpot 15 mins before serving, and add the cream (you just want it to have a creamy texture, not to drown out the tomato taste). Serve with feta cheese as a topping (I usually have a bowl of it crumbled for people to spoon over it themselves) it makes the taste of the peppers pop!

**WARNING**: This makes a ton! Use your own discretion in amounts, usually my family of four has this, then we have enough after for a light lunch, or several school lunches. It freezes well, too.

My family looooves this with my rice. Just take the amount of rice you want used and put it in a frying pan on med heat with enough butter to keep it from sticking. Brown the rice very well, then cook as you usually would. This adds a nicer flavor, almost a nutty taste.

It is also good as a sauce over any kind of pasta.

Oh! I forgot, it is a very thin sauce, and my sister enjoyed it as soup for her lunch. Just another idea ^.^
