So I did my broccoli chicken tonight. I threw the chicken, salt and pepper and a can of cream of broccoli soup in the slow cooker on low at about 9:30am before I left for work. When I got home at about 5:30, I added the fresh broccoli, stirred and let it cook for another 45 minutes. I grated some cheese on top, turned the slow cooker off and let it sit for about 15 minutes with the lid on.
It turned out GREAT ! The broccoli still had a fair crunch to it, the chicken was nice and juicy, tender and flavored from the soup and the cheese melted into the broccoli and chicken, so it wasn't just coated ... the cheese sort of sunk in. A nice side of rice, some crunchy carrot sticks and cucumber slices and a nice tall glass of milk and dinner was served. It was very simple, sort of plain by the standards here, but it was perfect for us and my 2 1/2 year old (very picky eater) daughter. She actually ate 2 big bites before I had to get her cereal ! =/
