Summertime Crock-Potting

Anyone have some "summery" crock pot recipes to share? I have a couple of crock pot cookbooks, but the receipes are all very autumn/wintery--thick stuff, hearty stuff. I really enjoy thick, hearty stuff, but when it's 100 degrees out, not so much. =)

Your icon is hilarious!

This is a recipe my family calls "drunken meat." It's low maintenance and a great dish for picnics and potlucks. The recipe makes a lot, but if you have a small family, you can freeze leftovers. They reheat wonderfully!

1 eye of the round roast (about 4-6 pounds)
1 pack of Good Seasons dry Italian salad dressing mix
1 can/bottle of beer

Place the roast in your crockpot; cover with the mix and beer. Cook on low for about 8 hours. Remove the roast from the crock and shred with forks, then return the meat to the pot and mix with the broth. Serve on crusty rolls (I top mine with jarred sweet pepper rings). These sandwiches go great with summery salads and aren't too heavy.

I am not wild about beer...in fact, I hate it....I really want to try this though, is there another liquid I could sub for the beer.

You might try another malt beverage. Some of the beer-like products (Zima comes to mind) work well enough for those of us who don't like Beer. Another thing to use with beef sometimes is red wine vinegar.

I'm thinking you might be able to substitute some kind of cola, or another soda. I know it sounds strange, but I've heard of ham cooked with Coke, and my parents were once friends with people who swore by adding Sprite to hot dogs and sauerkraut in the crockpot (and they were really good!).

I'm sure you could also use broth, too, though I agree you might want to add a little vinegar for that extra zing that the beer would bring.

You could try Dr. Pepper instead of beer. The "sauce" may end up a little thicker than you'd expect though.

I cook alot of lamb roasts in my crock as well as beef, and I accidentally opened a can of chicken broth and decided "what the heck" and poured it over my lamb roast.

Best lamb roast ever.

I'd totally recommend trying it with beef in the recipe of the first poster.
