Baking with Weyakin! *ding* Vegan Blueberry Muffins

On today's episode of Baking with Weyakin, we'll be making blueberry muffins. I went down the farmer's market this morning and got all sorts of good things, including a pint of fresh local blueberries! I used half of those blueberries to make these muffins. I was good and wrote down what I was doing again, so I can share with you. :-) I tend to use the whole wheat, organic, and natural/non-bleached versions of things.

Weyakin's Vegan Blueberry Muffins

Ingredients:

3 cups whole wheat pastry flour
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon

1/2 cup canola oil
1/2 cup maple syrup
1 tsp vanilla
1 cup soymilk
1/2 cup water
1 1/2 cups fresh blueberries

Directions:

Pre-heat the oven at 350°F and grease up or spray with non-stick spray one 12 cup muffin pan. Add the dry ingredients together and mix. Then, add all of the wet ingredients and the blueberries. Mix until blended and wet. Spoon out the batter into the muffin pan until evenly distributed. Bake for 10 minutes. At 10 minutes, sprinkle sugar on top of each muffin. Put back in the oven and bake for another 10 to 15 minutes or until a toothpick or fork comes out clean. Let cool and enjoy!
