I'm doing this thisafternoon for Paul and I.
It goes as follows:
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 3 eggs
- 1 cup milk
- 1/2 lb ground beef
- 2 cloves garlic crushed
- 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
- 4 cups shredded cheddar cheese (although I usually try to buy the one that has green jalapenos and some onion mixed in.)
1. Brown beef with garlic (and any other spice you prefer.)
2. Pour butter into a 13-in. x 9-in. x 2-in. baking dish; tilt to coat. In a bowl, combine the flour, salt and baking powder. Whisk eggs and milk, add browned beef and garic; stir into dry ingredients just until blended. Fold in spinach and cheese. Pour into prepared dish.
3. Bake, uncovered, at 350 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean. Cool for 5 minutes; cut into small squares. Serve immediately or transfer to a freezer container. May be frozen for up to 3 months.
