This time, some more easy dips. I actually made two of these for my own birthday and they turned out spectacularly. Before you inquire as to why I'd EVER choose to cook for my OWN party, keep this in mind: Grandma did the dishes.
Anyway - As always, these are simple, fast and tasty.
Vidalia Onion Dip
3 cups shredded swiss cheese
1 cup shredded parmesan cheese
3 cups coarsely chopped sweet vidalia onion
1 1/2 cups mayonaise
1 package real bacon bits
2 tbsp butter or margerine
1 tbsp garlic powder
a few drops of hot pepper sauce (like tabasco) or to taste.
Salt and pepper to taste
1. Preheat your oven to 350 degrees and spray the bottom of a pyrex baking dish (9x12) with cooking spray.
2. Dice the onion and sautee with the butter/margerine, salt and pepper and bacon until onion is translucent. Drain and set aside.
3. Grate the swiss and parmasan cheese (or measure appropriate amounts if pre-grated). Mix with mayonaise, bacon and onion, garlic powder and hot sauce.
4. Pour into the greased baking pan and bake for 30-35 minutes or until top is brown and bubbling.
5. Serve warm with crackers, tortilla chips or bread cubes.
Spicy Cheddar - Jalapeno Dip:
- 1 (4 ounce) can diced jalapeno peppers
- 1 cup shredded Parmesan cheese
- 1/2 cup shredded Cheddar cheese
- 1/2 cup mayonnaise
- 1/2 a brick of cream cheese, softened (4 oz.)
- 1 (4 ounce) can chopped green chilies
- 1 round loaf sourdough bread
1. Preheat an oven to 350 degrees
2. Combine jalapeno peppers, Parmesan cheese, Cheddar cheese, mayonnaise, and green chilies in a bowl. Cut the top off of the sourdough bread and hollow out the center to create a bowl. Fill the bread bowl with the jalapeno mixture. Do not throw away the insides of the bread bowl.
3. Bake in the preheated oven for 30 minutes.
4. Tear the hollowed out insides of the bread bowl into bite-size pieces and serve with the dip.
