Gluten-free experiment, day six

Oct 05, 2008 10:09

Saturday:

Mochi with Earth Balance
Leftover greens & gravy
To-die-for raw chocolate/hazelnut bar from Chaco Canyon
Crackers (rice thins and a few gluten-containing sesame sticks out of politeness) with hummus and modified Millennium tofu spread. FYI, on that spread I should have heeded eestiplika's warning that it doesn't come out like it does at the restaurant. I actually thought it was pretty bad--overly salty, too heavy on the tofu, and without much flavor profile beyond that--so I rescued it by adding caramelized carrot, more garlic (always more garlic!), extra virgin olive oil (so much for no added fat!), and some parsley. Next time I'll do all of that (and back off the added salt) and use white beans instead of the tofu, and I think I'll have something tasty.
Red wine
Sort-of-Thai-style tofu-on-greens salad with edamame and carrots, which was totally delicious
Vegetable soup with Sour Supreme
Green salad
More manners-induced gluten cheating for dessert: a Mighty-O mini doughnut and some sort of chocolate brownieish bar.

No ill effects from the gluten, unless it's what triggered this morning's migraine. I think that's unlikely, though, as I was already having to actively fight it off yesterday before I went to the party. Still, it hasn't been that long, and I didn't have very much. So on with the experiment!
