This is an awesome, easy to put together dinner, or for that matter, breakfast or lunch. It throws together, but takes about 45 minutes to cook, so keep in mind when planning your meals. You can make it ahead of time and heat it up later as well. I find that it heats up easily.
1 Deep Dish pie crust. I like Kroger brand or pet-ritz.
1 c milk
2 eggs
shredded cheese
salt and pepper to taste
*meat of choice
Preheat oven to 450.
Layer your meat on the bottom of the pie crust to about 1/3 full. Layer cheese on top of that. In a separate bowl, whisk together eggs, milk, salt and pepper. YOu can add other seasonings as well, depending on which meat you use**, but I almost always use garlic powder or garlic salt and seasoned salt. Pour the egg mixture over the fillings until almost full. It will rise a little bit, so don't overfill.
Bake for TEN MINUTES at 450, then lower the temperature to 350. Bake for TWENTY-FIVE MINUTES if you want to add a topping (see list), or for THIRTY-FIVE MINUTES if you want to leave it as is.
Topping List (add after the 25 minutes at 350, and cook for an additional ten minutes):
Sliced cheese
Shredded cheese
Seasoned bread crumbs
crushed crackers
French Fried Onions (like what you put on Green bean casserole)
Fried potato sticks
*For a dinner, lunch, or hors-d'oevres, use ham, turkey or chicken. YOu can use lunch meats, or leftovers. Leftover fried or seasoned and baked chicken is yummy....just chunk or shred and layer. YOu can add a little mustard or ketchup to the egg mixture for a little kick of flavor...I like the mustard myself :), or you can add seasonings that fit the meats. For a breakfast quiche, use raw sage sausage (it will cook well while in the oven) and add curry powder and a touch of red pepper for kick. YOu can add mustard as well. Serve with orange slices and squeeze the juice over the slice. It's delicious! You can also use bacon, although I've never really tried it. I would imagine that if you layer it with cheese for a few layers, it will cook in the oven as well, but you can also fry and crumble it. I have also heard of people putting shrimp in, although I haven't tried because I'm allergic. For that though, I'd suggest using a white cheddar and topping with a thin layer of cocktail sauce in the last few minutes of cooking (jus to warm the sauce).
Another variation would be something similar to a "cheeseburger pie", only with a twist. Use cooked ground beef (leftovers would be ok), and mix ketchup and mustard into the egg mixture. Add onions and tomatoes to the top and bake, and serve with a pickle spear.
**I tend to go by the smell of spices and seasonings when choosing what to use, but some spice containers give suggestions on what to use it on, and I'm sure there are guides on teh web if you don't want to just jump in blind.
