A Winter Warmer

It's been a while since I wrote a food related post. That's partly because I've just been lazy, and partly because on some of the occasions I made something yummy I enjoyed it too much and didn't bother to take any pics hehe.

Well, with all the cold cold weather we've been having around here I have been trying to make lots of nice warming foods. Today I made this yummy soup

It's an edited version of Tuscan Bean and Vegetable Soup which is from a book my mum gave me.
I added in some fried bacon rashers into the soup just to give it a slightly different feel, and had to put in different fruit juice from usual but it still turned out sooo good!! I love this soup because it's so warm and filling and healthy too. It's almost like a stew because it has so many vegetables and beans in it so it's a great dish to have as lunch on a cold day ^^

A quick recipe for anyone that's interested:

PUT...

1 medium Onion - chopped
1 Garlic clove (I always add a little more ^^) - finely chopped
2 Celery sticks - sliced
1 large Carrot - diced
400g/14oz tin of Chopped Tomatoes
1.2L/2pints/5cups Vegetable Stock
150ml/5fl.oz/2-3rds-cup Dry Red Wine (I usually use Red Grape Juice as I don't drink wine)
1 teaspoon dried Oregano

...into a large saucepan and bring to the boil then simmer for 15 min.
Then stir in...

425g/15oz tin of mixed beans/pulses
2 medium Courgettes (Zucchini) - diced

...and cook uncovered for a further 5 min before adding...

1 tablespoon Tomato Purèe (paste)
Salt & Pepper to taste

Continue to heat the soup mixture for a further few minutes and then it will be ready to serve.

SO THAT'S IT.
It's well worth the effort and you can play around with the ingredients if there's anything you really don't like or don't have at home ^^
