Dessert Question

So I'm catering my own wedding. For dessert I'm planning on serving mini cupcakes in two flavors (vanilla orange and strawberry lemonade), brownies on a stick, and spritz cookies. How on earth do you figure out how many to make? The guest list is at 85.
