The exception to this is that after you've made your final payment, (usually 60 days before like the pp said) some lines won't honor the price drop. However, last minute deals are less common in the summer, since it is the peak season for cruising. I'd book now...pricing aside, while you're waiting for last minute deals, the ship you are looking at could book up completely.
If you're considering Carnival, check out their new "Early Saver Rates". They're applicable 3 months before for short cruises and 5 months before for longer cruises. The drawback is that the deposit is non-refundable. However, you can change your reservation completely for $50 or for free if you upgrade (which in some cases could cost less than $50). We saved way more hundreds, so even if we have to change it later, we think it is still worth it.
Also, if you're considering Alaska at all, the deals are fantastic right now.
