It also depends on where you're going and where you sail from. I live in Florida, and I get emails all the time for last minute cruise deals. I think Miami is one of the cheapest places to sail from. My FH and I want to do a cruise to Northern Ireland, but we can't do that til the summer of 2010 because they only cruise that time of the year. So we plan on booking a last minute 3 or 4 night cruise the weekend after we get married (so, the first week of December) and I'm confident we'll get something for under $200 each.

You'll be sailing at the end of the summer when boats are probably a little more booked. It would probably be smart of you to book soon, but since you're not too picky on destinations, I don't see anything wrong with waiting until you're closer (again, basing this off of sailings out of Florida.. there's so many, so there's always options.)

And another word of advice, if you're going to be sailing to the carribbean, keep in mind that it's hurricane season, and the worst months for hurricanes are August and September. Last minute cruises during hurricane season tend to get cheaper because less people are willing to take the chance of traveling, or they're having to cancel their reservations because of previous storms. Whatever you end up doing, get trip insurance!

I can understand people who are flying out to take a cruise, because air deals don't tend to get better last minute, but if you're within driving, it can be a killer deal! In November, I saw a last minute week long cruise out of Miami for under $300/person! It's typically really easy to find cruise deals- the cruise industry makes most of their money by selling alcohol and pictures onboard. It's very typical for people to spend twice as much on board as they spent on the cruise itself. But as long as you watch your spending, it can be a super cheap and super awesome vacation!

And I'll just toss this out there for anyone wanting to cruise the carribbean... if you have the chance to take a ship that is stopping in Tortola, GO... don't think about it, just go. It's amazing. I've been on a few cruises, and that's the only place I'm desperate to visit again.

yeah, we're only about 3 hours from galveston, so we'll probably leave from there.
