Special Wedding Addressing

Hello once again...

So my FH and I have started printing out our DIY invitations (which are looking quite nice), and thus, this weekend I'll probably start tackling addressing the envelopes (because the FH has chicken scratch for handwriting).

A few things I'm trying to figure out...

Most of these websites talk about outer and inner envelopes, but since we're going the DIY route, we only have one envelope to work with.

Thus, I'm looking for guidance with the following situations:

1. Doctor and wife -- As in, the husband has his Ph.D (not MD) and the wife has his name. One website said to address this as Dr. rather than Doctor which is the title for a medical doctor. Is this correct?

2. Families -- I have some relatives who have one or two kids living outside the home (college), and one or two still under the age of 18. Given that I have no easy way to find out the college students addresses at school (else I'd send them their own invites), I want to convey that the college kids are invited too. Is there a preference for "Mr. & Mrs. John Doe and Family," or "The Doe Family" to convey this message?

3. Single Folks -- This is where the lack of an inner envelope comes into play as I guess you're supposed to put just the single person's name on the outer envelope and then say, "Miss Jane and Guest" on the inner. What to do with just one envelope to work with? Put "& Guest" or leave it just as "Miss GI Jane?"
