I grew up grilling on a Weber kettle charcoal grill. I always used lighter fluid, or the charcoal that was pre-treated. When I moved to Texas, I bought a gas grill. It was great, but I missed the flavor you got from charcoal. When we moved into our house, I reclaimed our gas grill and found it to be in disrepair. The burners needed replacing and anything that was steel/iron was rusted. The kids party was fast approaching and we were rushed so we bought a cheap charcoal grill to use until I could either repair the gas grill or we could buy a new one.
The first few times we used it, I used lighter fluid. It was difficult to get the fire started so I used a little more lighter fluid than usual. The food came out tasting a bit like lighter fluid. (yuck!) Then I watched Alton Brown's show on grilling on FoodTV. He recommended using a charcoal chimney starter and some crumpled up news paper. Well, I decided that was what we were going to try next. Cheryl bought one the other day and tonight I'm using it for the first time. I'm sold. One piece of crumpled up newspaper, a full chimney of charcoal, and about 20 minutes, I had a fire so hot I could barely pick up the chimney starter to dump it out without burning my knuckles.
Now, a London Broil marinated in a Cajun BBQ sauce is sizzling away. AB is my hero! As if I needed another reason for Alton Brown to be my hero...
