Greetings Everyone!
Last night I had dinner with some friends and it was A LOT of fun. The food was amazing. It has been awhile since I have had a nice sit down formal dinner with friends. Duffy’s condo is beautiful. It’s very large and is exactly some place that I would want to live. I am not a big Merlot fan, but we had a Merlot that was about $40.00 a bottle and it was OMIGOD good. I enjoyed it so much they gave me a bottle to take home.
Menu:
Fresh salad with strawberries and mandarin oranges tossed in a homemade dressing made from local honey and a few other goodies.
Hot Yeast rolls. They were from Kroger, but they tasted homemade. We were all very impressed.
Steamed Asparagus with a hollandaise sauce
A nice risotto
¾ inch cut Pork loan slow cooked with a creamy mushroom Dijon.
I am not a big fan of mushrooms, but this was oh so good…Amazingly moist.
For dessert, we had peach cobbler. It was one of the best peach cobblers I have ever had. It was more like a bread pudding. It even had pecans. This recipe will be mine...oh yes it will.
Of course there was good conversation, smack talk and all around verbal nonsense. I was the youngest one there and let me tell you, I was reminded every second they had a chance. We talked about making this a monthly even and we are schedule to do it again in March. I am very excited.
Today has been a good day. I am getting work done, but also antsy to get the hell out of here. At lunch today we decided to sign one of our older friends up for the Red Hat Society. YES…YES…WE DID. One of the best $20.00 we have ever spent. I can’t wait until she starts getting e-mails and her membership package here at work!
