But how do you know that? It's so easy to play nice, say the right things and look contrite!

Because I saw the guilt on his face as I was told of the fate of myself and the rest of the Air Nomads. Someone who was just "making nice" would not have thought to react in such a fashion. His reaction was not a logical one; it was emotional.

Zuko is no longer the person that you knew. Although what you speak of explains some of that guilt, if that was the type of person he used to be.
