That's sorta complicated. See she's blind but she's also an Earth Bender. Basically they just like to chuck rocks at each other, except Toph's worked it so she can see through her earthbending.

Strangely enough she uses her feet to do that.

But we sorta scammed people for money that way. No one else can Earth Bend the way Toph does so when we'd gamble and stuff no one had a clue that Toph knew where the rock was or could move stuff or anything. Definitely helped that we were in Fire Nation territory, too.
