So i was trying to figure out what to have for dinner tonight and i realized i had all these veggies to get rid of...AND i just bought the newest weight watchers cookbook. Now, while i never follow recipies exactlly, i found this book very inspiring, as my usual fare includes lots of butter, cream, etc. So i base my ideas off this book...and today i wanted something yummy with really low points value.
Stir-fry Chicken
serves: 2
1 large chicken breast, boneless, skinless and cut into strips
1 red pepper, diced
1 green pepper, diced
1 Cup frozen broccoli
1 Cup peas
1/2 cup carrots, sliced
(use just about any veggies you have on hand)
2 tsp chopped ginger
4 cloves garlic, diced
1 no-fat chicken stock
2 tbsp Soy sauce
2 tbsp sesame oil
1/3 c seame seeds (toasted on low heat until aromatic)
2 green onions, sliced diagonally
1.In a bowl, combine stock, soy sauce, garlic and ginger
2. Heat oil in non-stick pan. Add chicken and saute for about 5 mins (until it looses its pInk)
3. Add red and green peppers. saute 2 mins.
4. Add the rest of the vegetables, along with the broth mixtures. Cover and simmer on low for 5 minutes. Uncover and simmer for another 5, allowing sauce to thicken and vegetable to be crispy.
5. Feel free to serve over whole wheat pasta, brown rice or just by itself
6. Garnish with green onions and sesame seeds
Points per serving: (without rice or pasta) 3!
