Giant Zucchini!

Since we now have a backyard it was decided that we would start a vegetable garden this year. I was very excited about the idea even though I have a long history of killing almost everything I try to grow. You know, I can't quite decide. I should probably come up with something by dinner time tomorrow or Wednesday. Otherwise it will be too old and I will be sad. Any suggestions?

My mom used to slice them and bake them in the oven with bits of bacon. God knows why. Terrible, terrible way to cook zucchini.

But let's see: You could go Chinese and put them in a stir-fry. You could go New Mexican and put them in a burrito with potatoes, corn, beans, red chili on top. You could stuff them (especially that big one) with mushrooms, onions, bread crumbs, etc. You could make a veggie sandwich with zucchini, sliced beets, fresh sprouts, red onions, swiss cheese and and Veganaise. You could grill them with olive oil. You could stick them on shish-kebabs with mushrooms and cherry tomatoes. The zucchini is all-powerful! Bow before your green master!

Steam it for just a bit and serve with a little butter or olive oil and some salt/pepper to taste...or fry it in a pan until just soft the same way. Maybe add some garlic too...and onion? :)
