So my exams ended on Monday and since then i have successfully lazed around my house and have also baked up a storm and caused a havoc in the kitchen ~ Can you blame me? I spent my whole semester dreaming of recipes and of days spent baking from morning to evening, so I've sought to seize the opportunities presented within the last few days.
I finally left home last night like all hapz people who have been partying since the papers ended! Except that... i went to cow's house to watch "Crazy, Stupid, Love" with Cow and Charlie (cow and I spent the whole time cooing about ryan gosling and charlie regarding emma stone. Sigh.
So this will be the first of numerous posts tonight re my kitchen adventures! And to start it off, it's got to be my cheat recipe that I go to every time I want to make something without having the mess that ordinarily comes with the process of baking.
Key ingredients:
Grated dark chocolate and a huge measuring cup full of freshly brewed coffee
(omg, almost grated my fingers off from grating the damn chocolate)
Kahlua
possibly the only time I ever use kahlua
whipped mascarpone with caster sugar, italian fingers dipped into the mixture of coffee and kahlua and there you have it - my cheat dessert: tiramisu.
Ordinarily, or as with most tiramisu recipes, they require tonnes of egg yolks and custard and everything volatile that requires way too much time and attention for a person like me, who wants to do a million things while watching running man, everyday. So meet my cheat recipe that I always turn to when I need a dessert, am deathly bored and when i've impulsively taken the car out to Phoon huat and left the store with blocks of mascarpone and cream cheese ($$$$$$$). The recipe doesn't require any egg yolks, there is a near zero chance of messing up - it's pretty much idiot proof to be quite frank. A very easy peasy idiot proof tiramisu :)

BOOM. THIS IS A CHEAT SHEET WORTHY BIRTHDAY CAKE.
500g mascarpone cheese
2 Tbsp caster sugar
60g grated dark chocolate
400ml freshly brewed coffee, cooled
2 Tbsp kahlua
A large pack of italian fingers
Whip the cheese and sugar until soft peaks are formed, avoid over-beating. Dip the fingers into the coffee mixed with kahlua and layer the base of a glass bowl with the fingers. Cover it with a thin layer of the whipped cheese and sprinkle a layer of grated chocolate over. Keep at it, til' you're out of ingredients!
