as for cooking, cooking in the west differs from ethnic cuisines because like in the west all the techniuqe goes into the designing of th erecipe wheraeas in like hte ast, say, the receipes are fairly simple but the kill lies in th eexecution. also in like th efreshness of th eingredients and the comi=bination of flavors. this can probably illuminate the west's regard for science.

\personally, though, i rather think the freshness and flavor of the ingredients is more interesting than how fancy a recipe is.. but there is a certain beauty in th eease and approachability in being able to throw together something passable using cheap ingredients bought from any supermarket provided you have a good recipe... i think the french perfected and mastered this approach an dpretty much western cuisine IS french cuisine.

also, i guess you could say that western cuisine is more like science and ethnic cuisine more like art.
