Wheee! Bentos. Mmmmm.
So I packed my first real bento today. It turned out quite lovely, and I will post a pic of it. I wanted to do something with red, white, black, and tan, because I thought it would be fun. My biggest accomplishment was the spears of sliced strawberries and bananas. They look so fancy and took only a second!
I've got a few plans for next week's meals and I thought I'd share in case anyone is interested. I've got ingredients for these but I like to go by whim, too, so I'm listing more options than I'll really make...
1. Chicken salad with pecans and celery (made fresh), crackers, baby greens, and red pepper soup (from a box).
2. Bulgogi (will be leftover), cabbage and fresh greens, rice, and baby pickles.
3. Midwestern Hot Weather: Tofu pups sliced into octopus, with American potato salad, homemade pickles, and carrot sticks.
4. Ploughman's luncheon: ciabiatta, Tilamook cheddar, apple slices, celery, carrots, sour cherry jam.
5. Taco salad (will be leftover), rice, tomatoes, cheese.
6. Spaghetti cups (not sure what to call these but I got a great recipe from Mac), carrot sticks, and olives.
7. Pepper soup, crackers, a cheese spear, pretty cut carrot flowers, celery sticks, and ranch dressing.
8. Chicken salad made spicy, on a sandwich, fresh fruit spears, baby carrot salad and baby pickles.
9. Cocktail meatballs in jam, baby vegetables, pasta salad.
I have two Amy's frozen lunches in case I forget to eat before coming to work (like I did today). I also have two boxes of awesome cookies and a new shipment of my favorite tea. I'm giving up coffee after my morning hit and switching to tea, because it works better with my system.
Today I had an Amy's enchilada, a banana, about a cup of strawberries, crackers, smoked ricotta, pecans, and a couple olives. In a bit I will eat my gingersnaps. I think that's pretty good (for me).
