French Leek Pie

As we have loads of leeks in the garden at the moment I keep making this when I can’t think what to have for dinner. Quick, easy and very tasty.



French Leek Pie

1 (22cm) Pie Crust 1tbsp Butter 3 Leeks (washed and chopped) 250ml Cream 160g Gruyère (grated) 1 pinch Salt 1 pinch Black Pepper
Serves: 6
Yield: 1 9″ Pie
Ready in: 50 mins (10 mins Prep - 40 mins Cook)

1. Preheat oven to 190 degrees C.

2. Melt butter in a large saucepan over medium-low heat. Stir in leeks; cook, stirring occasionally, for about 10 minutes, or until soft.

3. Season with salt and pepper. Reduce heat to low. Stir in cream and cheese, and warm through. Pour mixture into pie shell.

4. Bake in preheated oven for 30 minutes, or until custard is set and golden on top. Allow to sit 10 minutes before cutting pie into wedges.
