I keep starting entries and then forgetting about them. This dated from mid-July, when I was left to my own devices while my family went down the shore. :-P

It all started with beets I bought at the farmers' market. They were just so pretty, and only 2 dollars a bunch! So I bought my bunch, got home and said "Huh. What do I do with these?" Lo and behold, the weight loss site has in fact got a beet salad recipe, and I have all the ingredients. And then, because I am kind of lazy and bad at planning meals, I thought I'd use the weight loss site recipes to figure out what I'm eating. This was both fun and a dubious idea, since I am hit-or-miss as a cook, and because some of the recipes were odd. (Also I am lazy and hate chopping things, I have discovered.) Also a bit dubious because man, I ate A LOT of beet salad.

So below the cut, my small efforts.





Salmon Salad with Blueberries



Herb-Coated Filet Mignon with grilled asparagus

Sweet Potato Turkey Hash, with Scrambled Egg Whites



Lemon Tilapia, Zucchini-Mushroom Saute, Baked Sweet Potato



Grilled Tofu Salad



Honey-Lime Broiled Scallops, Sauteed Spinach with Sesame Oil



Grilled Steak with Onions, Steamed Broccoli, Beet Salad

In other news, the first year of school is OVER. Comps are coming up at the end of the month, which means lots and lots of studying. I am sort of doubting my decision to start my practicum early, since I'd probably be better off having those two days each week to study, but there's really nothing I can do about it now.
