Willie’s Chocolate Shop
Willie Harcourt-Cooze became famous in 2008 as the star of the Channel 4 documentary Willie’s Wonky Chocolate Factory. Working from a small unit on a Devon industrial estate, Harcourt-Cooze produces highly distinctive chocolate. Some of the beans he works with are grown on his own cocoa plantation in Venezuela. They are fermented and dried, then shipped to the Devon factory, where they’re roasted and conched (mixed and ground) in antique machines. They are turned into high-quality cocoa and chocolate bars, some of which are sold in Waitrose, Harvey Nichols and Selfridges. This is chocolate for hardcore cocoa fans; the 100% cacao is recommended for grating on savoury food. Each of the bars is made with cocoa beans from a specific area, and each have a distinctive taste: some smoky, others fruity, others with toasty, caramel notes.

Sir Hans Sloane
Globe-trotting chocolatier Bill McCarrick of Sir Hans Sloane, named after the English doctor credited with inventing drinking chocolate, hails from the US and trained as a chocolatier in Switzerland. McCarrick founded Sir Hans Sloane in 2006, and is one of very few artisanal producers in the UK to process the beans himself. “The flavour of each chocolate varies according to the harvest,” he says. Set up by two female ex-Oxfam employees who’d worked closely with Fairtrade, Plush is focused on being both fabulous and fair. This small company doesn’t stint on its ideals - the ingredients are ethically-sourced and produced (the entirepackaging is eco-friendly) and the luxurious chocolate is of a high standard, made by experienced chocolatiers in Belgium. The Belgian caramels are particularly toothsome while the hand-painted papier mache gift boxes are ideal pretty presents for friends with a conscience.

This is a choclate company that has a novel way to save the planet. It promises to save a tree in the Amazon rainforest for every chocolate bar they sell; no small task when you think about it.
