Oatmeal Pie. I'd never heard of such a thing, so of course I had to make it!
I start out by beating my eggs and adding my wet ingredients. The corn syrup just does NOT want to stir in!
So, out came Mr. Handmixer.
He made quick work of the mixing. Next, I add my oatmeal. Since I love the raisin-oatmeal combination, I also added 1 cup of raisins to the mix.
And into the pie shells it goes! This is the quickest pie I've ever made. Seriously, no more than ten minutes, and five of those was gathering the ingredients.
Since there's no meat in these pies, Ike doesn't even pretend to be interested.
35 minutes later, out of the oven come the pies. I have to admit, I was expecting something like an oatmeal cookie in a pie crust.
They're really pretty pies. They came out all bubbly and nice. I did use 1/2 cup of margarine (The recipe wasn't sure of the amount.)
I let them rest for 30 minutes, and then couldn't wait any longer! To my surprise, they're not cookie like at all; more like a molasses or pecan pie. I didn't let them rest long enough, and ended up scooping it out with a spoon.
I served it with olé vanilla ice cream. It's very sweet and rich. This is definitely a holiday pie!
Here's the second pie I cut into this morning. It's nicely set up, but still needs to be scooped out with a spoon; it just doesn't hold together very well. But it's got a lovely texture, chewy and sweet. The raisins add a nice little extra touch, but are definitely not necessary.
If you need to throw together a quick pie (but have time to let it set!) I recommend this one. So quick and easy to make. And it passed the roommate test!
