two more that I added to my cooking community LJ:
Two easy and quick recipes:
Crostinis..




Ingredients:



Loaf of bread (day old would be easier to cut)
3 tomatoes
sliced olives (I used the whole jar that is pictured) you can buy already sliced olives which will make it so much easier)
salt
pepper
basil
Olive Oil
Buffalo Mozzarella (you can use the hard kind but it tastes so much better with soft)

Pre-heat your oven to 350
Cut your bread into slices:



Then chop up your tomatoes and olives, there should be the same amount of tomatoes to olives.



add two tablespoons of oil, salt and pepper to taste. About one tablespoon fresh basil. I used dried but of course better with fresh.
Mix that all up and spoon onto the bread



Then add your Mozzarella:



Pop them in the oven and when the cheese is melted they're done!



Chicken Parmesan (under an hour prep and cooking)




Ingredients:
Thinly sliced chicken breasts
parmesan cheese (already grated packages are easiest)
bread crumbs
tomato sauce
salt
pepper
parsley, basil, oregano
half an onion
two cloves of garlic
and of course Mozzarella cheese

Preheat your oven to 350
Mix equal amounts of bread crumbs to parmesan cheese. I believe I had about one cup of each.
Add salt, pepper and oregano to taste.



I clean my chicken with water and then dip them into the mixture. Add olive oil to your skillet and set to med-high. You are just going to brown, not cook, the chicken.



Then lay your browned chickens into a tray and put in the oven:



Now for the sauce,
Spill out any access oil and left over bread crumbs. Add fresh oil. Chop up the garlic cloves and add to the skillet. Medium heat. Chop up your onion and add. SAute until they are almost clear. Add the sauce. Salt, pepper, basil, parsley and oregano to taste. Let it simmer for 5 minutes.
Then add to your chicken. Give it ten minutes to soak in the sauce.



Now add your Mozzarella cheese. You want to completly cover your chicken with the cheese so make sure you have enough. I didn't :(
When the cheese melts you're done!
