Potato & Mushroom Salad (Serves 4)
Ingredients:
250g new potatoes, washed & halved
125g fresh mushrooms, sliced
1 onion, chopped
1/4 cup stuffed green olives, sliced
Dressing:
1/2 cup yogurt
2 tablespoons mayonnaise
1 tablespoon chopped parsley
1 tablespoon tarragon vinegar
1/4 tablespoon dried tarragon
1/4 teaspoon mustard powder
Pepper to taste
Method:
Cook potatoes in boiling water until tender. Drain and cool. Combine potatoes and remaining ingredients in a large bowl.
To prepare dressing:
Whisk all ingredients together. Blend dressing through potato mixture. Cover with plastic wrap and refrigerate until required. Serve as meal accompaniment.
