the_homemaker asked me for my homemade dressing recipe that I recently used on a tex-mex caesar salad. So, I decided to type up the whole recipe because I would certainly make it again, it was delious! Sometimes, I don't like eating salad alone so I paired it up with a side of cornbread which went really well.
Tex-mex Caesar Salad:
Ingredients:
1/2 lb skirt steak
1/4 cup olive oil
1 lime (will need 2 limes if making dressing)
1 tsp mexican oregano
1 minced garlic
1/2 tsp salt
1/2 tsp pepper
1/2 package of frozen corn or 1 ear fresh corn, shucked, silks removed
1 red onion, sliced
1 bunch romaine lettuce, chopped
3 oz shredded cotija cheese
Dressing:
1/4 cup mayonnaise
2 Tbsp water
1/2 tsp chili powder
1/2 tsp cumin
1 lime
1. Dice steak into small strip and create a marinate of olive oil, juice of one lime, oregano, garlic, salt, and pepper. Marinate at room tempature for an hour or so.
2. Heat a stovetop grill pan over medium heat, add steak and grill to your liking. Set aside.
3. In the same pan gril corn and red onions between 8-12 minutes. Set aside.
4. In a large bowl whisk mayonnaise, water, juice of the other lime, chili pepper, cumin and a little salt and pepper. Place in fridge to chill.
5. Layer chopped romaine lettuce, onions and corn, steak, cotija cheese, and dressing. Enjoy!
