this is certainly the most city-like area i have ever lived in. i like actually being able to bike places. especially since matt is the handiest person ever and put my bike back together, haha. i do need to find another brake pad so i can have a brake on my front wheel though...hmmm. i'm renting from a couple named matt and liz, and i guess they consider me their roommate, yay. i like them. :) it's messy here and i always wear shoes downstairs or my feet are black (doggie dirt...) but it's great.
i'm still looking for a job. i need to look harder, clearly. boo for michigan.
i did, however, make some of the best pancakes ever this morning. i don't usually do so great with pancakes so this was an epic moment for me.
i like thick pancakes, by the way. :D
amazing pancakes
1 cup all purpose flour
1 cup whole wheat flour
3-4 tsp baking powder
1 tsp salt
3 tbsp sugar
2 eggs, beaten
1 cup milk
1 tsp vanilla extract
squirt lime juice
5 tbsp oil (pref. 2-3 cinnamon infused)
combine dry ingredients (making sure there are no lumps in your flour).
quickly add in wet ingredients and stir just to combine (no visible large lumps) and allow to sit for a minute or so, but no longer or you start to lose some lift.
grease griddle and fry on both sides. yum!
everybody needs a good pancake recipe!
matt just put up the fun little door that now separates the upstairs from the down, and my kitties can roam freely (and i can actually sleep in my bedroom now). now i can finally put my apartment together!
i wish it was october already...it's really hot and muggy here. boo michigan. :/ sweet thunderstorms every day though.
wish me luck in the continued job search (goodness knows i need it).
