Gardiner, Ann and Sue Wilson. The Inquisitive Cook (Accidental Scientist).NY: Owl Books, 1998. I read this book perhaps a couple of months ago but wanted to mention it. It’s a short book comprised of scientific explanations of why things work certain ways in cooking. It was both interesting and usefully applicable to my cooking, although perhaps a bit dry and more edifying than entertaining.
The website is pretty nice, too, although based on the monthly features dates it looks as though it is no longer updated. The Exploratorium also features pages on the science of other topics, like sports and gardening. The interactive demos, such as "Kitchen Sink-o-Pation" on the music pages are pretty fun.
