Peppermint Chocolate Brownies
(sorry the picture is so blurry!)

These are really good! Cakey, but still .. brownie-y? I don't know. They were originally just regular chocolate brownies but I replaced the vanilla flavoring so that there was peppermint flavor instead, and I added in some of those little Redhots candies. SO GOOD, and perfect for the holidays!

3/4 cup turbinado sugar
3/4 cup whole wheat pastry flour
1/4 cup unsweetened cocoa
1 tsp. baking powder
1/4 tsp. salt
1/2 cup water
1/4 cup vegetable oil
1/4 tsp. peppermint extract

Directions:
1) In a medium-to-small bowl, mix together the dry ingredients with a fork.
2) Add in the wet ingredients and mix together thoroughly until smooth.
*Optional* Mix in some red sugar crystal sprinkles and RedHot candies if you'd like. I did and it turned out really well, especially for christmas! I also garnished the top with red sprinkles a little bit after coming out of the oven! cutee
3) Pour mixture into a greased 8x8" pan and cook at 350* for 23-25 minutes.
4) Let the brownies cool well before serving.

( For me that would mean being 118 pounds. Which means losing another 12 or so. But through training and healthy eating.. as in 118 pounds of muscle, not 118 pounds of unathleticness. When I was 118 in summer I was thin but I wasn't toned, so I was still a size 3/4 and I could fit into size 26 jeans but the 28's fit better. I want a bowflex haah I wish I had more money =[ )

I would love to meet Faith Hill. I am inspired by her strength.

If I could live anywhere I would live somewhere hot if my family was there with me.

If I won a million dollars I would work less and spend more time with my girls.

My role model in the fitness industry is Elaine Goodlad. She is beautiful, grounded and real.

If I weren’t a personal trainer, I’d be a sports broadcaster.

In my fridge, I have cottage cheese, cauliflower, broccoli, eggs, and chicken.

My sense of style is simple. Jeans and t-shirts!
