After the past few nights having been filled with left-overs of that spicy Mexican-style dish I made on Saturday, I was craving something sweeter. I also hadn't done anything oriental in a while, so I improved once again; luckily it was successful. Here is what I ended up with.
Sweet Oriental Tofu/Veggie Wraps
peanut oil
1/2 medium red onion, chopped
2-3 cloves garlic, chopped
8-10 baby carrots, chopped
2 medium potatoes, cubed
a few fresh broccoli florets
1/2 large green bell pepper, chopped
sliced shiitake mushrooms
1/2 medium tomato, chopped
1/2 package of extra-firm tofu, cubed
a few handfuls of spinach, finely chopped
a large handful of bean sprouts
low sodium soy sauce
agave nectar
1-2 pinches allspice
roasted sesame seeds
stone ground 100% whole wheat tortillas
Directions:
1) Pour some peanut oil into the bottom of a medium sized saucepan (about 2tbsp) and heat on medium-high. Add in the onions and garlic; cook until onions become translucent.
2) Add in the carrots, potatoes, and tofu. Stir in with the garlic and onions.
3) Pour in some soy sauce (about a 1/2 cup) and add the broccoli, bell pepper, mushrooms, and tomato.
4) Mix it all up so that the soy sauce has covered all of the ingredients.
5) Drizzle some agave nectar across the top of the mixture and stir.
6) Cover and simmer for about 5-6 minutes.
7) Stir in the bean sprouts and spinach. Cover again and simmer for another two minutes.
8) Drizzle some more agave nectar (depending on how sweet you want the dish to be) and add a pinch or two of allspice; mix.
9) Throw in a small handful of sesame seeds and stir everything together one last time; cover and simmer for another minute or so. Remove from heat.
10) Heat up a tortilla in the microwave for about 10-15 seconds; add some of the stir fry to the middle of the tortilla. Fold. (If the sides won't stay down, try using some water&flour or agave nectar to help the process a little)
11) Serve & enjoy!

I have to admit, I really liked this dish. Maybe it's just the fact that I was satisfying a craving for something sweet in a healthier way or the fact that I simply love experimenting with new dishes. Either way, I was happy. I'm also glad that I got to try out some of my new agave nectar - and I have to say, I'm in love. I'm probably going to end up using it everywhere from now on, lol. I might have to get a small shampoo bottle or something to carry some around with me to replace crappy sugar packets you find at restaurants. =P
