Today was actually pretty good. For the first part I just did the usual surfing the internet, eating my organic vegan blueberry waffles & pure maple syrup (=D) and then dreaming of a world where I have my own garden to work on and dogs to walk. But then I had to come back to reality where it was raining and I had an AP Government project to do. So I worked on my campaign project on the 2006 Senator Race for VA until about 4:30pm, then I decided I really wanted to go grocery shopping. Grocery shopping is basically a hobby of mine. Anyway, here's what I got:
2 white onions, 2 tomatoes, 1 green bell pepper, fresh baby dill, 1 mango, 1 pomegranate, shiitake mushrooms, pineapple chunks, blueberries, 3 leeks, fresh spinach, salad lettuce, canned beets, canned dice tomatoes, nasoya organic cubed super firm tofu, organic wonton wraps, long grain brown rice, lentils, pure vanilla extract, guacamole, ground ginger, sushi rice vinegar, japanese seaweed sushi paper, sushi rice, 1 box botan rice candy, frozen organic vegan blueberry waffles, frozen spinach, frozen cubed zucchini, frozen corn, frozen broccoli florets, frozen cauliflower florets, soy delicious cookie avalanche ice cream, 1 box tofutti cuties... and some other stuff I'm probably forgetting
I feel very satisfied having listed all that. :] I <3 food. Except for some reason today they didn't have any red or green peppers! :[
After getting back from the grocery store I decided to make COOKIES! I wanted to use up this little package of chopped macadamia nuts I had, but I also always have to use chocolate in my baking (I don't get it anywhere else...) so I decided to make Chocolate Macadamia Cookies! But I couldn't find a vegan recipe so what I did was take a regular omni Double Chocolate Cookies and veganized them, and instead of chocolate chips I used macadamia nuts. =) BUTTT... They took so much longer than the recipe said they would to finish. So I was really frustrated, but when they were finally done two of the racks I let cool for too long on the cookie sheets, so they stuck. =( So instead of cookies for the most part I have cookie *CHUNKS* - but they're yummy, so oh well. Very crispy, too - which I like. Anyway, here's the recipe... remember, I adapted and veganized this on my own based on my own tastes, so feel free to do the same. :]
Chocolate Macadamia Cookies
1 3/4 cups whole wheat pastry flour
1/4 cup unbleached all purpose flour
3/4 cup natural unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. sea salt
1 1/2 cups turbinado sugar
1 1/4 cups soy margarine
1 tsp. pure vanilla extract
2 tbsp. water
1 tbsp. safflower oil
2 tsp. baking powder
1/4 cup unsweetened applesauce
1 2.25oz package (1/2 cup) chopped macadamia nuts
Directions:
*Preheat oven to 350*
1) Combine flour, cocoa powder, 1 tsp. baking soda, and salt in a medium-sized mixing bowl. Set aside.
2) In another mixing bowl and with a rubber spatula, mix together the sugar, margarine, and vanilla extract until evenly distributed.
3) Add the water, safflower oil, and 2 tsp. baking powder to the wet ingredients. Mix together.
4) Add in the applesauce and mix until everything is fully incorporated.
5) Slowly add the wet ingredients to the dry, and fold together with a rubber spatula until "whisk-able".
6) Whisk until everything is evenly distributed.
7) *OPTIONAL* If you are like me and like smaller nuts in cookies, chop the "chopped" macadamia nuts into halves prior to adding them.
8) Fold in the chopped macadamia nuts.
9) Drop batter by teaspoonfuls onto ungreased cookie sheets.
10) Bake until when you touch the top of the cookie with your finger it gives slightly but still feels firm. The timing will be different for everyone.. I think it took my cookies about 25 minutes to properly bake, but I recommend checking in on them every 8-10 minutes at first and then every 5 minutes or so from that point forward.
11) Set cookies aside to cool on the cookie sheets once they have finished baking. Don't be like me, however, and let them cool for so long that they stick.
12) After about 2 minutes or so, transfer cookies to a wire rack to cool completely.
If you let them cool on the cookie sheet for too long, they'll crumble when you try to get them off, like a lot of mine did! :[ Here's the mess I ended up with, and still have yet to clean up!

I love baking. ;] Even though my friends seem to dislike my veganized cookies/cupcakes/brownies *cough* I know that deep down they LOVE them. (heh..) I'm in love with being vegan though. I can't wait 'til Christmas - since I'm poor and without a job and can't afford much on my own, I use Xmas to get stuff I need. I'm asking for lots of cookbooks, vegan alternatives (nutritional yeast, which I can't get anywhere around here, and clothes/shoes, etc), and some new & improved cooking utensils. Excition.
