I made a killer pork roast, so I wanted to share the recipe for the rub I made...you could use it on chicken, beef, or lamb!
Rub:
(everything is approx- so you can add or delete it to your liking!)
2T brown sugar
1T coarse salt
1T coarse black pepper
1T red pepper flakes
1-2T olive oil
2 large garlic cloves, chopped fine
Mix all together to form a grainy paste, and massage into meat. Let meat sit on counter like a half hour at room temp in the rub, before cooking. I made a 4Lb pork roast...I cut slivers in the meat and put sliced garlic in additionally. I cooked the pork at 350 for about an hour, then turned the oven off and let it sit for about an hour. Letting it sit finished cooking it, and made a nice au jour for the meat...it was delish!
