Winter. Hard fishing. That's why I froze so much smoked kahawai.

In the wind at Breaker Bay, no bites there at the end of a day of no bites everywhere else, I consoled myself planning a dinner pie. Leek and potato and spring onion and mushroom and yellow capsicum. Garlic and green curry and turmeric. Frozen smoked kahawai fillets, thawed and roughly flaked.




Very wholemeal pie dough with olive oil and milk, baking soda and turmeric, coconut sugar, rolled roughly out and flipped off the board, lid a less successful repeat. Make sure there's enough dough.



The mixture is already thickened with more wholemeal, after frying and simmering.



45 minutes, let it cool for ten or fifteen. Chewy crust, slightly crisp, slightly dry in corners. ALmost perfect, not quite. For the fussy any defects could be fixed with butter. Or sour cream.
