recipe: Spicy Asian Brittle

I know a few of you have asked for this, so here you go!


Spicy Asian Brittle
1 1/2 c. toasted almonds
1 1/2 c. toasted cashews
1/2 c. wasabi peas
1/2 c. sesame sticks
2 tbsp sesame seeds
1 tsp crushed red pepper flakes
1 tsp ground ginger

1 c. sugar
1/2 c. water
___________________
3 tbsp soy sauce

--Combine all top  ingredients in a bowl.  Set aside
--Line a cookie sheet with non-stick foil.  Set aside
--Combine water and sugar in a medium saucepan on high heat, stirring until sugar melts.
Bring to boil and cook until it reached 300'.  (about 10 minutes)
--Add in soy sauce (caution:  it will boil & might spash!)
--Add in nut mixture, stirring quickly to coat.
--Pour onto prepared cookie sheets and flatten with  a wooden spooon (helps to spray spoon w/ cooking spray)
--Let cook then break into small pieces
--Store in airtight container (fridge is good, but let warm before eating!)

4 1/2 cups.
