Driving By with a Recipe

Gee--you'd think I'd be getting tired of baking, but no, sir.

Just made a batch of these: Banana-Coffee Cake Muffins

2.5 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp instant coffee powder
1 tbsp hot water
1 1/3 cups mashed fully-ripe bananas
1 c butter, softened
1 1/4 cups granulated sugar
1 cup semisweet chocolate chips

Preheat oven to 400 F. Grease 12 3" x 1.5" muffin cups (I used cupcake liners).

In a large bowl, stir together flour, baking powder, baking soda and salt.

In a separate bowl, combine instant coffee powder and water. Stir into bananas; reserve.

In a large bowl, cream butter & sugar until light & fluffy. Beat in egg. Mix in banana mixture. Stir in flour mixture. Fold in chocolate chips. Divide batter evenly into prepared muffin cups.

Bake for 25-30 minutes, or until a cake tester inserted in center of muffin comes out clean. Remove from tins and cool on a wire rack.

End of recipe--Thanksgiving Dinner # 3 tonight (left-overs from Thanksgiving Dinner # 1). No more turkey, no more dressing, no more sweet potatoes, just a smidge of green bean casserole.

Advent tomorrow--Nativity scenes out, Advent wreath up. Hard to believe the church year's starting all over again, and the calendar year is almost over. Time goes so fast.
