Cooking with Spirits Question

No, not THAT kind of spirits, I mean liquor.

Generally, when one cooks with wine or spirits, the alcohol gets cooked off, leaving only the flavor. I know there are dishes made with rum (like cake and candy), but I can't think of any right now where the rum is added before cooking. If you cook with rum, does it leave behind a pleasant flavoring, or does the rumy goodness disappear if you try?
