Here's a little factoid for ya- I went to Robert E. Lee high school and we had a huge "rebel" flag hanging outside on the building as well as inside. We brought it to all the football games, etc. When I was in 11th grade there was a huge up-roar about the flag due to some sudden complaints by minority students. In the end they made us take the flag down and someone designed an alternative, politically-correct flag to use instead. The school is still named after the Confederate general, although strangely enough, since I graduated they turned the school into the "fine arts" high school!
As for words, you'd probably be terribly disappointed to hear me speak. I have almost NO stereotypical Tx accent. I do say "ya'll" though, but I know many people not from Tx who say it too. When I was younger I had a habit of saying "gen-U-wine" instead of genuine for some reason. My father says "skeeters" for mosquitoes and "tarred" for tired. He also pronounces salmon with the L. My mom is from Ca so she doesn't really use any Texasisms. When my grandmother (from east Tx) answered her phone, she'd always say, "yella?" I have a friend who says, "fixin" to mean getting ready to. Interestingly, my dad's friend Pete, who is also from SA and of Norwegian descent, has the thickest Tx accent! He sounds like the guys from "King of the Hill" and I can never understand him!
I say "soda" or sometimes "coke." I also say "tennis shoes," and I have no idea what "sprinkles" or "jimmies" are! One term we use here that seems to confuse many people is "tubing" or "toobing." It refers to filling an inner tube up and riding down a river. I thought this term was universal but apparently it's not well-known everywhere.

I know what tubing is! Maybe those people you talked to never lived next to a river. Or don't go outside.
