In today's Big News, I cooked! Since moving I've just had stuff from boxes. Because I am under the delusional impression that you people actually care what I had for dinner, I am going to give you the recipe (with helpful comments by me).
Chili Relleno Bake
Ingredients:
3 large eggs, separated
3 tablespoons all-purpose flour
1 can (7 ounces) diced green chiles
1 can (16 ounces) vegetarian refried beans
2 cups (8 ounces) shredded cheese (The recipe calls for Pepper Jack, but I used a colby/Monterey Jack mix)
Instructions:
1. Preheat oven to 375
2. Spray 8x8-inch glass dish with cooking spray (If using a metal dish, reduce heat to 350 or so)
3. Beat egg whites in small bowl until stiff peaks form (Not too small though. I learned that the hard way.)
4. Whisk egg yolks in a separate bowl; fold into egg whites
5. Add flour into eggs until just combined
6. Fold in green chiles
7. Spread beans over bottom of dish
8. Top with half of egg mixture, spreading evenly
9. Sprinkle with half of the cheese, then remaining egg mixture and remaining cheese
10. Bake uncovered for 30 minutes, or until golden brown
The recipe claims to serve four, but I can eat half by myself if I'm hungry enough.
