eek!
I made yummy vegan fajitas tonight! They are really easy and really good (note, I don't care much for measurement, what looks good to you is fine)
1 bell pepper (any ol' color!), cut into strips
1 red onion, sliced
3 cloves of minced
olive oil for frying
1 pack of lightlife smart menus chick'n strips
Saute the veggies to the firmness you want, throw in the strips and brown to your desire.
you can also add a bit of cumin, or tabasco, or even chili flakes, depending on how bold you feel
wrap it all in a tortilla (or serve it on rice!)
for extra-tastiness spread a little bit of guacamole on the tortilla
