Vegetarian omelette

Omelette is one of the dishes I do when I'm travelling or don't have much time. You can get most of the ingredients anywhere in the world, you don't need a lot of them and you can even vary, what you put into the omelette. You can find the recipe and more photos here.





Ingredients

2 eggs
1/2 red bell pepper
50 g frozen peas
25 g mature cheddar (or whatever cheese you like)
1/2 onion
fresh herbs (parsley and chives)
coconut oil (or whatever other oil you have)

Instructions

1) Heat up the coconut oil in a non-stick pan. Meanwhile, cut the onion and red bell pepper. Once the oil is hot, add onion and pepper to the pan and fry for 5 minutes.

2) Add frozen peas and fry for another 3 minutes.

3) In a separate bowl, beat the eggs. Add to the pan, fry it on each side for 3 minutes. Don't worry if you cannot manage to flip it over in one piece - it might not look so pretty, but still taste really good!

4) Grate the cheese, switch to low heat and add the cheese to the omelette. Leave for 1 to 2 minutes.

5) Transfer the omelette to a plate and garnish with fresh herbs. Enjoy!
