I started using up my goat's cheese tonight! A couple of you suggested pasta-type things, so I worked with that and came up with this:

- penne pasta
- onions
- roasted garlic
- spinach
- sundried tomatoes
- toasted pine nuts
- black olives
- creamy goat's cheese
- olive oil
- basil
- salt & pepper

I sauteed the onion, spinach, and roasted garlic in olive oil, then at the end added chopped sundried tomatoes, black olives, and some of the oil from the jar of sundried tomatoes, plus salt & pepper & basil (I used dried basil 'cause it was all I had, but I imagine fresh basil would make it absolutely delicious!). Mix with the pasta and goat's cheese until it's all evenly distributed and the pasta has a nice creamy coating. Mmm!

I still have plenty of the cheese left, and I'm looking forward to making some of your suggestions!
