hey all

recipes for pumpkin guts? pumpkin seeds?

I'm just done carving now and I don't wanna just toss everything....

I FINALLY mastered pumpkin seed roasting this year!

Preheat oven to 250 degrees
Get the big globs of gunk off the seeds, but you don't need to wash them.
Sprinkle seeds liberally with salt
Spread seeds in a single layer on baking sheet
Roast for 55 minutes.

I used kosher salt, and the seeds were REALLY good.
Then I got more seeds, and used chili powder and cinnamon. They were good, but with the salt was better.

A friend of mine tossed the pumpkin seeds in olive oil before adding salt and they were the best I've ever had.

I added cumin and a touch of red pepper to salt and olive oil for the first batch for a more flavorful combo.

I have more seeds now that I'm debating how to do them.

I rinse the seeds, then coat with curry powder & a bit of olive oil, then roast at 350 for till fragrant, about 10 minutes.

Pumpkin soup, depending on how much you carved. I just chucked in some chopped onion (I used a red one cos that's all I had) then some garlic, sauted that a bit, added pumpkin cubed pieces, salt and pepper, parsley, cinnamon, 1/2-1 litre vegetable stock, tomato puree, a few cherry tomatos, let it simmer with a lid on for like 30 minutes. Let it cool a bit, liquidize with a blender, handheld or machine-y one. Or have it chunky, whatever you prefer.

I roasted my seeds with vegan butter, salt, and paprika.
