Whole Wheat Banana Muffins

I made these last night and they were AMAZING! Even my picky 9 year old brother loved them. The during taste was banana, the after taste was honey. They're also very moist.

I have a question too. What are your favorite recipes that involve whole wheat flour? Or your favorite recipes in general? I'm open to pretty much anything, except for pickles, and I'm lactose intolerant, so I'd prefer no dairy but it's not a big deal if the recipe involves dairy.

Whole Wheat Banana Muffins (makes approx. 24 muffins, recipe can be halved)

3 ½ cups whole wheat flour (I used white whole wheat flour)
2 teaspoons baking soda
1 teaspoon salt
2/3 cup vegetable oil
1 cup honey
4 eggs
5 or 6 ripe bananas (mashed)
½ cup hot water

1. Preheat oven to 325*
2. Mix dry ingredients.
3. Beat oil and honey. Add eggs and beat.
4. Add mashed bananas and beat.
5. Add dry to wet, alternating with hot water, mix after each addition.
6. Cook for 15 minutes, or until golden brown.
7. Cool on rack.

flour: whole wheat, muffins, bananas, honey
