This recipe was inspired by
Kashi's Black Bean Mango frozen entree, which I love, but which is kind of expensive for a single serving.
Ingredients:
1 tablespoon canola or mild olive oil
1 small purple onion, diced
1 bell pepper (I used an orange one, but a combination of red and green would look nice), diced
1 mango, peeled and diced (you could also use frozen mango chunks)
4-6 slices pickled jalepeno pepper, or one small fresh, minced and seeded (optional)
1 15-ounce can black beans, drained
2-4 tablespoons apple cider or apple juice
Dash of salt
Saute the onion and bell pepper in oil until they are soft and fragrant. Add the mango and jalapeno, and cook until the mango has softened. Add the beans, 2 tablespoons of apple cider, and simmer for 5 minutes. Add another two tablespoons of cider if it's looking dry, and a dash of salt to taste. Serve over rice.
It turned out great! Everything looked kind of mushy, and the longer it sits around the mushier everything gets...but the better it tastes. I may add some fresh chopped cilantro at the end next time, too.
Makes 2-3 decent-sized servings.
