Oatmeals!

Here are a couple oatmeal recipes I found in my computer files that I know I got from various someone elses, but alas, I can't find the names to give credit to. Sorry!

Protein tip: To add protein to my oatmeal, I often stir in some cashew butter or peanut butter or almond butter before cooking.

Crockpot Oatmeal
This one is the only one that calls for rolled oats.
2 cups milk
1/4 cup brown sugar
1 tablespoon melted butter
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup rolled oats
1 cup chopped apple
1/2 cup raisins
1/2 cup chopped walnuts

cook on low overnight

Steel Cut Oatmeal ala Crockpot
1 cup McCann's Irish Oatmeal
4 cups water
1/2 cup half and half or cream
1 tsp vanilla
1/2 tsp salt

Totally optional extras. (Add one or any combination you choose, before cooking.)
dried cherries
dried cranberries
raisins
orange zest
chopped dates
a handful of organic coconut
1/2 cup brown sugar
1/2 cup molassas
1/2 cup maple syrup

Put all ingredients into the crockpot the night before. Low setting for 8 or 9 hours.
Don't use a huge crockpot because the cereal will be too spread out and cook too fast.

When ready to eat, top with toasted chopped almonds, pecans, walnuts, or hazelnuts, or
sliced bananas.

Aha! I found the recipe that's probably from rudbekia! I don't think she'll mind if I post it here.:
Overnight Oatmeal
1 c. Irish (steel cut) oatmeal
1 c. dried cranberries
1 c. dried chopped dates
4 c. water
1/2 c. half and half

Combine all the ingredients in a crockpot. Cook on low for 8-9 hours. The leftovers can be stored in the freezer in individual serving containers and thawed as needed.
