My boyfriend and I have been major bigtime gigantic slackers about cooking lately. I'm vegetarian (lacto-ovo). He's not, but he's happy to eat vegetarian at home. He just feels like he doesn't know any recipes (despite the piles of cookbooks I have...) or how to plan a week of meals.
Ideally, I'd love to find a cookbook that's designed around dinners for the week. Something where it gives you a shopping list for the week, and maybe the leftover beans you make on Monday get used on Wednesday, or you buy one pepper and use part on Tuesday and part on Thursday. Know what I mean? I used to have a cookbook for single vegans that was written like this and the concept was fabulous (though recipes were iffy...) Has anyone seen anything like this?
Barring that, a cookbook with quick, simple recipes that make 2-4 servings would be awesome.
Any advice?
Thanks in advance!
