I just made my first Soup!~

i just made a yummy version of chipolte tortilla soup

Here is what I did:
I first stuck canned corn on a baking sheet and broiled the corn for like 5 minutes
I chopped onion and green bell pepper and sauted it in the bottom of the soup pan with salt and pepper (three swirls of Olive oil) covering it with a lid until onion was translucent and stirring occasionally. With a piece of ham tore up (about 5 min)
I rough chopped 3 chipoltle peppers. Two without seeds one with
and stirred in the peppers with the onion/bell peppers and one "cap-full" (2 tblspoon) salsa
THEN i added seasonings (chile pepper, garlic salt, onion powder). Warmed through.
Then I added 1 can of chicken broth (fat free) and 1 can of water. Bay leaf and salt/pepper
Added corn and red potatoes cut up and crushed up corn tortilla chips (only a little though)

If I had chicken cooked I'd have added that too!

I brought up to a simmer and left at a simmer for 20 minutes

Put some into a bowl, added some shredded cheese and a scoop of sour cream with a couple of whole chips and ate it up!
